Description

A soft, warmly spiced apple cider donut bread made with reduced apple cider and finished with a crisp cinnamon sugar topping.


Ingredients

  • 1 cup apple cider, reduced to 1/2 cup
  • 1/2 cup unsalted butter, softened
  • 1 cup light brown sugar, packed
  • 2 teaspoons vanilla extract
  • 2 large eggs, at room temperature
  • 1/4 cup unsweetened applesauce
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/3 cup granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F and line a standard 1-pound loaf pan with parchment paper.
  2. Place the apple cider in a saucepan over medium heat and simmer, stirring frequently, until reduced to 1/2 cup. Set it aside to cool.
  3. Beat the softened butter and brown sugar on high speed until light and fluffy, about 3 minutes.
  4. Scrape down the bowl, add the vanilla, and beat in the eggs one at a time.
  5. Stir the applesauce and cooled reduced apple cider together in a separate bowl.
  6. Whisk the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger together in another bowl.
  7. Alternate adding the dry ingredients and apple cider mixture to the butter mixture in three additions, beginning and ending with the dry ingredients.
  8. Mix only until combined, then spread the thick batter evenly in the prepared loaf pan.
  9. Stir the granulated sugar and cinnamon together, then sprinkle the mixture evenly over the batter.
  10. Bake for 40 to 45 minutes, or until the loaf springs back when touched and a knife inserted in the center comes out mostly clean.
  11. Cool the bread in the pan before slicing and serving.

Notes

  1. For the strongest apple flavor, reduce 1 cup of apple cider to 1/2 cup before adding it to the batter.
  2. If you are short on time, use 1/2 cup unreduced apple cider, although the apple flavor will taste milder.
  3. Avoid overmixing the batter so the finished loaf stays soft and tender.
  4. Store the cooled bread tightly wrapped at room temperature for up to 3 days or freeze individual slices for up to 3 months.
