Description

Apple Pie Cinnamon Rolls are the ultimate fall breakfast mash-up—soft, gooey cinnamon rolls filled with warm apple pie filling, topped with buttery streusel, and finished with a drizzle of cinnamon vanilla icing. Easy to make using store-bought dough, these cozy treats are perfect for holiday brunches, weekend mornings, or dessert.

Ingredients

Scale

Cinnamon Rolls:

  • 2 packs (10 total) Pillsbury Grands cinnamon rolls

  • Butter, for greasing muffin tin

Apple Pie Filling:

  • 2 Honeycrisp apples

  • 2 Granny Smith apples

  • ⅓ cup brown sugar

  • 1 tsp cinnamon

  • 1 tbsp lemon juice

  • ¼ cup melted butter

  • 2 tbsp cornstarch dissolved in 3 tbsp water

Streusel Topping:

  • 5 tbsp partially melted butter

  • ½ cup all-purpose flour

  • ½ cup brown sugar

  • ½ tsp ground cinnamon

Cinnamon Buttery Icing:

  • ¼ cup melted butter

  • 1 cup powdered sugar

  • 2 tbsp milk

  • ½ tsp vanilla extract

  • ½1 tsp cinnamon (to taste)

Instructions

  • Prep: Preheat oven to 400°F (200°C). Grease muffin tin with butter.

  • Shape Rolls: Press each cinnamon roll into a muffin cup to form deep wells.

  • Make Filling: Peel and dice apples. Mix with brown sugar, cinnamon, lemon juice, butter, and cornstarch slurry. Heat until apples soften and syrup thickens.

  • Fill Rolls: Use a slotted spoon to fill each cinnamon roll with the apple mixture, leaving syrup behind.

  • Add Streusel: Mix streusel ingredients into crumbs. Top each roll generously.

  • Bake: Cover loosely with foil and bake for 15 minutes, removing foil after 5 minutes and rotating pan halfway through.

  • Make Icing: Whisk icing ingredients until smooth.

  • Serve: Let rolls cool 5–10 minutes, then drizzle with icing and serve warm.

Notes

Press rolls firmly into muffin cups to create deep enough wells for filling.

Mix of apples adds sweet-tart balance.

Add chopped pecans to streusel for extra texture.

Store-bought cinnamon rolls keep it quick and easy, but homemade dough can be substituted.
