Description

Refreshing tomato cucumber avocado salad with herbs and a bright citrus vinaigrette, perfect as a light side or dip.


Ingredients

Scale
  • 2 large ripe avocados, peeled and diced
  • 1 English cucumber, peeled, seeded, and chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 small red onion, thinly sliced
  • 3 green onions, thinly sliced
  • 3 tablespoons avocado oil
  • 2 tablespoons lime juice or lemon juice
  • 1 tablespoon rice vinegar
  • 2 teaspoons maple syrup
  • 1 small garlic clove, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon fresh oregano, chopped
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon black pepper

Instructions

  1. Whisk together all dressing ingredients in a bowl and set aside.
  2. Add avocado, cucumber, tomatoes, red onion, and green onions to a large bowl.
  3. Pour the dressing over the salad.
  4. Gently toss until everything is evenly coated.
  5. Taste and adjust salt or citrus as needed.
  6. Serve immediately.

Notes

  1. Use extra virgin olive oil instead of avocado oil if preferred.
  2. Apple cider vinegar or red wine vinegar can replace rice vinegar.
  3. Best enjoyed within 12 hours for optimal freshness.
