- 1 teaspoon garlic powder
- 1 tablespoon Dijon mustard
- 8 ounces fresh mozzarella, torn
- 2 cups grape tomatoes, halved
- 2 tablespoons fresh basil, chopped
- 2 tablespoons vegetable oil
- 2 pounds boneless, skinless chicken breasts, pounded evenly
- Sea salt, to taste
- Black pepper, to taste
Instructions
- Preheat the oven to 400°F.
- Whisk balsamic vinegar, honey, olive oil, garlic, Italian seasoning, onion powder, garlic powder, and Dijon mustard until smooth.
- Tear mozzarella into pieces and toss with tomatoes and basil. Season lightly with salt and pepper.
- Heat vegetable oil in a large oven-safe skillet over medium-high heat.
- Season chicken with salt and pepper and sear for 2–3 minutes per side until golden.
- Pour the balsamic mixture over the chicken and bring to a simmer, scraping up browned bits.
- Remove skillet from heat, top chicken with mozzarella mixture, and transfer to the oven.
- Bake uncovered for 18–23 minutes until chicken is fully cooked.
- Rest for 3–5 minutes before serving.
