- 1 ¾ cups almond flour
- 1 ¾ cups powdered sugar
- 3 large egg whites
- ¼ cup granulated sugar
- ½ teaspoon vanilla extract
- Yellow food coloring optional
- 4 ounces cream cheese softened
- 2 tablespoons unsalted butter softened
- 1 cup powdered sugar
- 1 small ripe banana mashed
- 1 teaspoon vanilla extract
- 2 tablespoons crushed vanilla wafers
Instructions
- Sift almond flour and powdered sugar twice.
- Whip egg whites and gradually add sugar until stiff peaks form.
- Mix in vanilla and food coloring.
- Fold dry ingredients into meringue until batter flows slowly.
- Pipe rounds onto lined baking sheets.
- Rest shells 30 to 45 minutes and bake at 300°F for 15 to 17 minutes.
- Cool completely.
- Beat filling ingredients until smooth.
- Pipe filling onto half the shells and sandwich together.
- Chill before serving.

- Use room-temperature egg whites.
- Allow shells to rest before baking.
- Chill macarons overnight for best texture.
