3 cups cooked corn kernels (from about 5 medium cobs)
-
2 cups cucumber, peeled, seeded, and chopped (about 1 large cucumber)
-
½ cup chopped fresh basil
-
¼ cup snipped chives
-
2 tbsp light mayonnaise or vegan mayo
-
Salt and freshly ground black pepper, to taste
Instructions
-
In a medium bowl, combine corn, cucumber, basil, and chives.
-
Stir in mayonnaise until everything is lightly coated.
-
Season with salt and pepper to taste.
-
Serve immediately or chill until ready to serve.
Notes
Fresh corn is best, but frozen works too—thaw and drain well.
Peel and seed cucumber to prevent excess moisture.
For a mayo-free version, try Greek yogurt or mashed avocado.
Add lemon juice or vinegar for extra brightness.
Best enjoyed fresh; store leftovers for up to 2 days.
