  • 2 boneless, skinless chicken breasts or thighs

  • 2 medium sweet potatoes, cubed

  • 1/2 cup BBQ sauce (store-bought or homemade)

  • 1 cup broccoli, chopped

  • 1 bell pepper, diced

  • 1/2 cup quinoa, rice, or farro (optional)

  • 1 avocado, sliced (optional topping)

  • Fresh cilantro, chopped (optional topping)

  • Pumpkin seeds or shredded cheese (optional topping)

  • Olive oil

  • Salt and pepper


Instructions

  • Preheat the oven to 425°F (220°C).

  • Toss the cubed sweet potatoes with olive oil, salt, and pepper. Spread them on a baking sheet in a single layer. Roast for 25-30 minutes until crispy and tender.

  • While the sweet potatoes are roasting, cook the chicken. Grill or bake the chicken until cooked through. Slice or shred it into bite-sized pieces.

  • If using grains, cook quinoa, rice, or farro according to package instructions.

  • Sauté the broccoli and bell pepper in a bit of olive oil until tender.

  • Assemble the bowls by starting with a base of grains (optional). Add a layer of roasted sweet potatoes, top with BBQ chicken, and add sautéed vegetables.

  • Finish off with fresh toppings like avocado, cilantro, pumpkin seeds, or shredded cheese.

Notes

For a vegan option, replace the chicken with chickpeas or tofu.

You can swap out grains for a low-carb option like cauliflower rice.
