Description

Juicy chicken breasts are coated in a Parmesan-breadcrumb crust, baked until golden, and perfect for pairing with pasta, mashed potatoes, or a fresh salad—no reservation required.

  • 4 boneless, skinless chicken breasts

  • 1 cup grated Parmesan cheese

  • 1 cup Italian-style breadcrumbs

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp dried Italian herbs (oregano, basil, thyme)

  • Salt and pepper, to taste

  • 2 large eggs

  • 1 tbsp olive oil

  • Fresh parsley, chopped (optional garnish)


Instructions

  • Prep: Preheat oven to 400°F (200°C). Grease or line a baking sheet with parchment.

  • Mix coating: In a shallow bowl, combine Parmesan, breadcrumbs, garlic powder, onion powder, Italian herbs, salt, and pepper.

  • Whisk eggs: In another bowl, beat eggs until smooth.

  • Coat chicken: Dip each chicken breast in eggs, then dredge in the Parmesan-breadcrumb mixture. Press lightly to help the coating stick.

  • Arrange & drizzle: Place coated chicken on the baking sheet. Drizzle olive oil over the tops.

  • Bake: Bake for 25–30 minutes or until golden and internal temperature reaches 165°F (74°C).

  • Rest & serve: Let rest for 5 minutes. Garnish with parsley and serve hot.

Notes

Pound chicken to even thickness for faster, uniform cooking.

Breadcrumb substitutes: crushed crackers or cornflakes work well.
