Description

Caesar Vinaigrette is a light, zesty take on the classic Caesar dressing. It blends bold ingredients like garlic, lemon juice, Dijon mustard, and anchovy into a smooth, oil-based dressing. This version skips the creamy base but keeps all the rich, savory flavor. It’s perfect for salads, grain bowls, marinades, and more—ready in minutes with no blending needed.

Ingredients

Scale
  • 1/3 cup olive oil

  • 2 tablespoons fresh lemon juice

  • 1 teaspoon Dijon mustard

  • 1 teaspoon Worcestershire sauce

  • 1 clove garlic, finely minced

  • 1 teaspoon anchovy paste (or 2 anchovy fillets, mashed)

  • 2 tablespoons grated Parmesan cheese

  • Salt and black pepper, to taste

Instructions

  1. In a bowl, whisk together lemon juice, Dijon mustard, Worcestershire sauce, garlic, and anchovy paste until smooth.

  2. Slowly drizzle in olive oil while whisking to blend well.

  3. Stir in grated Parmesan cheese.

  4. Taste and season with salt and pepper.

  5. Store in a clean jar in the fridge. Shake before each use.

Notes

Use fresh lemon juice for the best flavor.

Grate Parmesan just before mixing for better texture.

For a vegan version, swap anchovy with capers or miso and use nutritional yeast instead of cheese.

Lasts 5–7 days in the fridge.

Great as a dressing, marinade, dip, or sandwich spread.
