Description

Cajun Rice is a buttery, well-seasoned Southern side dish made with peppers, onions, and long-grain rice.


Ingredients

  • ⅓ cup unsalted butter
  • ½ red bell pepper, diced
  • ½ green bell pepper, diced
  • ½ yellow onion, diced
  • 3 ¼ cups low-sodium chicken broth
  • 1 ¼ teaspoons kosher salt
  • 1 teaspoon garlic powder
  • ½ teaspoon ground thyme
  • 1 teaspoon paprika
  • ¼ teaspoon black pepper
  • 1 bay leaf
  • 1 ½ cups long-grain white rice

Instructions

  1. Melt butter in a saucepan over medium-high heat and add peppers and onion.
  2. Sauté until softened, about 5 to 7 minutes.
  3. Add broth, salt, garlic powder, thyme, paprika, pepper, and bay leaf and bring to a boil.
  4. Stir in rice, cover, and reduce heat to a simmer.
  5. Cook 20 to 25 minutes until rice is tender.
  6. Rest covered for 10 minutes, then fluff and serve.
