Description
Cajun Rice is a buttery, well-seasoned Southern side dish made with peppers, onions, and long-grain rice.

- ⅓ cup unsalted butter
- ½ red bell pepper, diced
- ½ green bell pepper, diced
- ½ yellow onion, diced
- 3 ¼ cups low-sodium chicken broth
- 1 ¼ teaspoons kosher salt
- 1 teaspoon garlic powder
- ½ teaspoon ground thyme
- 1 teaspoon paprika
- ¼ teaspoon black pepper
- 1 bay leaf
- 1 ½ cups long-grain white rice
Instructions
- Melt butter in a saucepan over medium-high heat and add peppers and onion.
- Sauté until softened, about 5 to 7 minutes.
- Add broth, salt, garlic powder, thyme, paprika, pepper, and bay leaf and bring to a boil.
- Stir in rice, cover, and reduce heat to a simmer.
- Cook 20 to 25 minutes until rice is tender.
- Rest covered for 10 minutes, then fluff and serve.
