Description

A hearty baked dinner combining a creamy chicken and vegetable filling with a buttery, cheesy Cheddar Bay biscuit topping for classic comfort food flavor.

Ingredients

Scale
  • 2 cups cooked, shredded chicken
  • 1 packet Cheddar Bay biscuit mix
  • Ingredients listed on biscuit mix package
  • 1 1/2 cups milk
  • 1 cup chicken broth
  • 1 cup frozen mixed vegetables
  • 1/2 cup sour cream
  • 1 can cream of chicken soup
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 1/2 cups shredded cheddar cheese
  • 2 tablespoons butter, melted
  • 1 tablespoon fresh parsley (optional)

Instructions

  1. Preheat oven to 375°F and lightly grease a 9×13-inch baking dish.
  2. Whisk together milk, sour cream, and cream of chicken soup until smooth.
  3. Stir in garlic powder, black pepper, frozen vegetables, and shredded chicken.
  4. Pour the mixture evenly into the prepared baking dish.
  5. Prepare the Cheddar Bay biscuit mix according to package directions and stir in shredded cheddar cheese.
  6. Drop spoonfuls of biscuit dough evenly over the chicken mixture.
  7. Drizzle melted butter over the biscuit topping and sprinkle with parsley if using.
  8. Bake for 40–45 minutes until biscuits are golden brown and cooked through.
  9. Let rest for 5 minutes before serving.

Notes

  1. Great for using leftover rotisserie chicken.
  2. Let the cobbler rest before serving so the filling thickens.
  3. Store leftovers in the refrigerator for up to three days.
