Description

Cheeseburger Macaroni Soup is a creamy, filling soup that blends ground beef, pasta, and melted cheese into a comforting one-pot meal.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt, to taste
  • Black pepper, to taste
  • Onion powder, to taste
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1 cup matchstick carrots
  • 1 1/2 cups uncooked macaroni noodles
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Parmesan cheese

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add ground beef and diced onion and cook until browned.
  3. Stir in garlic and cook briefly.
  4. Sprinkle in flour and stir until combined.
  5. Slowly add chicken broth and simmer.
  6. Add heavy cream and seasonings and stir well.
  7. Add carrots and macaroni and bring to a light boil.
  8. Reduce heat and simmer until pasta is tender.
  9. Stir in cheddar and Parmesan until melted.
  10. Serve warm.
