These Cheesy Beef Fiesta Wraps are bursting with Tex-Mex flavor. Juicy seasoned beef, melty cheese, and colorful veggies all wrapped in a warm tortilla—it’s the ultimate grab-and-go meal. Quick to prep, easy to customize, and crave-worthy!

Ingredients

Scale

For the Filling

  • 1 lb ground beef

  • 1 tbsp olive oil (if needed)

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 bell pepper, diced (any color)

  • 1 tbsp taco seasoning (or mix of chili powder, cumin, paprika, salt)

  • ½ cup canned black beans (drained and rinsed)

  • ½ cup corn (frozen or canned)

  • ¼ cup salsa or diced tomatoes

  • Salt and pepper to taste

To Assemble

  • 1½ cups shredded cheddar or Mexican blend cheese

  • 4 large flour tortillas (burrito size)

  • Sour cream (optional)

  • Fresh cilantro or chopped green onions (optional)

  • Jalapeño slices or hot sauce (optional)

Instructions

  • Cook the Beef Mixture
Heat a skillet over medium heat. Add olive oil (if needed), then sauté onion and bell pepper for 2–3 minutes. Add garlic and cook 1 more minute.
Add ground beef and break it up with a spoon. Cook until browned. Drain excess grease if needed.
Stir in taco seasoning, black beans, corn, and salsa. Simmer for 3–5 minutes until heated through and thickened. Season to taste.

  • Assemble the Wraps
Warm tortillas for 15–20 seconds to make them flexible.
Spoon beef mixture onto each tortilla. Top with shredded cheese. Add sour cream, jalapeños, or cilantro if using.

  • Wrap and Heat (Optional)
Roll up each tortilla like a burrito—fold in the sides and roll tightly.
For a crispy finish, place seam side down in a dry skillet over medium heat for 2–3 minutes per side until golden and cheese is melted.

  • Serve
Slice in half and serve hot with extra salsa, sour cream, or a fresh side salad.

Notes

  • Swap beef with ground turkey or plant-based meat for a lighter option.

  • Add rice to stretch the filling for more servings.

  • Great for meal prep—wrap individually and reheat when ready.
