- 3 tablespoons extra virgin olive oil, divided
- 1/2 medium yellow onion, diced
- 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
- 2 cloves garlic, minced
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 cup uncooked extra long grain white rice
- 1 large bunch fresh broccoli, cut into bite-sized florets
- 2 1/2 cups low-sodium chicken broth
- 1 1/2 to 2 cups extra sharp cheddar cheese, shredded
Instructions
- Heat 2 tablespoons olive oil in a large skillet over medium heat and sauté diced onion until softened.
- Season chicken with salt and pepper.
- Increase heat to medium-high, add chicken, and brown on all sides.
- Stir in minced garlic and cook for 2 minutes.
- Push chicken to one side, add remaining olive oil, and toast rice for 2-3 minutes until lightly golden.
- Pour in chicken broth, stir to combine, and bring to a boil.
- Reduce heat to low, cover, and cook for 12 minutes.
- Stir in broccoli florets, cover, and cook 8 more minutes until rice and broccoli are tender.
- Remove from heat, stir in 1/2 cup cheese.
- Sprinkle remaining cheese on top, cover, and let melt for 2-3 minutes before serving.

- Toast the rice for better flavor and texture.
- Cut broccoli into small florets for even cooking.
- Use freshly shredded cheddar for smoother melting.
- Add a splash of broth when reheating to keep rice moist.
