Description

Cheesy Corn Fritters are crispy, golden bites of comfort—crispy on the edges, soft in the middle, and loaded with sweet corn and melty cheese. Ingredients

  • 2 cups corn kernels (fresh or thawed from frozen)

  • 1 cup shredded cheddar or mozzarella cheese

  • 1 cup all-purpose flour

  • 1 tsp baking powder

  • 2 large eggs

  • 1/4 cup finely chopped green onions

  • Oil for frying


Instructions

  • If using fresh corn, slice kernels from the cob. If frozen, thaw and drain well.

  • In a large bowl, whisk together flour and baking powder.

  • In another bowl, beat the eggs, then stir in corn, cheese, and green onions.

  • Add wet ingredients to the dry ingredients and fold gently until just combined. Batter should be thick.

  • Heat a thin layer of oil in a skillet over medium heat.

  • Drop heaping tablespoons of batter into the hot skillet and lightly flatten each.

  • Fry for about 3 minutes per side until golden and crispy.

  • Transfer fritters to paper towels to drain. Serve warm with dipping sauce of choice.

Notes

Avoid crowding the skillet for optimal crispiness.

Add chopped jalapeños or chili flakes for a spicy twist.

Great with sour cream, chipotle mayo, or hot honey.

Can be baked at 400°F for 15–18 minutes, flipping halfway.
