Description

Ingredients

  • pounds boneless, skinless chicken thighs

  • ¼ cup unsalted butter
  • 2 tablespoons vegetable oil

  • ¾ cup green bell pepper
  • 4 garlic cloves
  • 2 teaspoons Cajun seasoning
  • ½ teaspoon paprika
  • ½ teaspoon thyme
  • 1 bay leaf
  • 2½ cups chicken broth
  • Salt
  • Black pepper
  • Fresh parsley
  • Cooked white rice

Instructions

  1. Brown seasoned chicken and set aside
  2. Cook butter and flour into a caramel-colored roux
  3. Add vegetables and cook until soft
  4. Stir in garlic, seasoning, herbs, and broth
  5. Return chicken and simmer until thick
