Description

Cinnamon Roll French Toast Bites are soft, golden bread cubes coated in a sweet cinnamon custard, cooked until crisp on the outside and tender inside. They bring the best parts of cinnamon rolls and French toast into a fun, bite-sized breakfast perfect for any day. Great for brunches, holidays, or family mornings!

    • 6 slices brioche or challah bread, cut into 1-inch cubes

    • 3 large eggs

    • ¾ cup whole milk

    • 2 tablespoons granulated sugar

    • 1½ teaspoons ground cinnamon

    • 2 tablespoons unsalted butter (for cooking)

    • ¼ cup granulated sugar (for coating)

    • 1 teaspoon ground cinnamon (for coating)

    • Optional toppings: maple syrup, cream cheese glaze, powdered sugar, fresh fruit


Instructions

    • Prepare the Custard: In a large bowl, whisk together eggs, milk, 2 tbsp sugar, and 1½ tsp cinnamon until smooth.

    • Dip Bread Cubes: Add bread cubes to the custard. Let them soak briefly, then remove and shake off excess.

    • Pan-Fry Method: Heat a non-stick skillet over medium heat with 1 tbsp butter. Cook soaked bread cubes in batches until golden brown on all sides, about 2–3 minutes per side.

    • Bake Method (Alternative): Preheat oven to 350°F. Place soaked bread cubes on a parchment-lined baking sheet. Bake for 10–15 minutes until golden, flipping halfway through.

    • Cinnamon Sugar Coating: In a small bowl, mix ¼ cup sugar and 1 tsp cinnamon. While bites are still warm, toss them in the cinnamon-sugar mixture.

    • Serve: Drizzle with maple syrup or cream cheese glaze if desired. Garnish with fresh fruit or powdered sugar.

Notes

Day-old bread works best as it holds its shape better.

For a dairy-free version, use almond or coconut milk and plant-based butter.
