Description

Creamy Coconut Mango Popsicles made with coconut cream, mango, and lime for a refreshing tropical dessert.


Ingredients

Scale
  • 2 cups frozen mango
  • 1 can full-fat coconut milk, cream only
  • 1/2 cup almond milk
  • 1/4 cup honey
  • 1 tablespoon lime juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch mixed with 1 tablespoon water optional
  • Shredded coconut optional

Instructions

  1. Allow the frozen mango to soften slightly at room temperature.
  2. Scoop the thick coconut cream from the can.
  3. Add mango, coconut cream, almond milk, honey, lime juice, vanilla, and optional cornstarch slurry to a blender.
  4. Blend until completely smooth.
  5. Pour the mixture into popsicle molds.
  6. Insert popsicle sticks and freeze for at least 6 hours.
  7. Remove the popsicles by running cool water over the molds.
  8. Optional: sprinkle with shredded coconut before serving.

Notes

  1. Fresh or frozen mango both work well.
  2. Use full-fat coconut milk for creamy texture.
  3. Silicone molds make removal easier.
  4. Store popsicles in freezer-safe bags for best freshness.
