Description

Cowboy Meatloaf and Potato Casserole combines a savory meatloaf base with creamy mashed potatoes, crispy onions, smoky bacon, and melted cheese. It’s a comforting, all-in-one dinner that’s hearty, satisfying, and full of flavor.


Ingredients

  • 1 pound (450 g) lean ground beef

  • ¾ cup (90 g) finely chopped onion

  • ⅓ cup (35 g) seasoned dry breadcrumbs

  • ¼ cup (60 ml) Jack Daniels® Honey Smokehouse Barbecue Sauce

  • 1 egg, lightly beaten

  • 2 teaspoons (4 g) chili powder

  • ¾ teaspoon (3.5 g) salt

  • 1 package (680 g) Ore-Ida® Steam n’ Mash Cut Russet Potatoes

  • ⅔ cup (160 ml) canned evaporated milk

  • 1 tablespoon (14 g) butter

  • 1 tablespoon (3 g) chopped fresh flat-leaf parsley

  • 1 teaspoon (3 g) garlic powder

  • 1 cup (115 g) cooked bacon crumbles

  • ¼ cup (15 g) canned crispy fried onions

  • ⅔ cup (75 g) shredded Mexican-style cheese blend


Instructions

  • Preheat oven to 375°F (190°C) and lightly grease a 9×9-inch (23×23 cm) baking dish.

  • In a large bowl, combine ground beef, onion, breadcrumbs, barbecue sauce, egg, chili powder, and salt. Mix well.

  • Press the mixture into the dish and bake uncovered for 20–25 minutes. Drain any excess fat.

  • Meanwhile, microwave potatoes per package instructions. Add evaporated milk, butter, parsley, and garlic powder; mash until smooth.

  • Stir bacon and crispy onions into the mashed potatoes.

  • Spread the mashed potatoes over the cooked meatloaf.

  • Top with shredded cheese and broil for 3–5 minutes until golden and melted.

  • Serve warm, with additional barbecue sauce if desired.

Notes

Adjust chili powder for more or less heat.

Substitute fresh mashed potatoes if desired.

Use other cheese blends like cheddar or pepper jack.

Prepare the meatloaf base ahead and refrigerate until ready to top and bake.

Add sautéed vegetables for extra nutrition.
