Stuffed Pepper Soup is a hearty, one-pot comfort food that brings together savory ground beef, sweet bell peppers, tender rice, and a tomato-based broth. It has all the flavors of classic stuffed peppers but without the fuss of stuffing—making it the perfect quick and cozy weeknight dinner.
Ingredients

1 lb (450 g) ground beef or turkey

1 tbsp olive oil

1 medium onion, diced

3 bell peppers (mixed colors), diced

2 garlic cloves, minced

1 can (28 oz / 794 g) crushed tomatoes

1 can (15 oz / 425 g) tomato sauce

4 cups (960 ml) beef broth

2 cups (320 g) cooked rice

1 tsp dried oregano
-
1 tsp dried basil

Salt & pepper, to taste
Instructions

Prep – Dice onion, chop peppers, mince garlic, and cook rice separately.

Sauté aromatics – Heat olive oil in a large pot. Add onion, cook 2–3 minutes, then stir in garlic for 1 minute.

Brown the meat – Add ground beef or turkey. Cook until browned, breaking it apart. Drain excess fat.

Add peppers – Stir in diced bell peppers and sauté until softened.

Add liquids & seasoning – Stir in crushed tomatoes, tomato sauce, beef broth, oregano, basil, salt, and pepper. Bring to a boil.

Simmer – Reduce heat and let simmer 20–30 minutes.

Finish with rice – Stir in cooked rice during the last 5 minutes. Heat through.

Serve – Ladle into bowls and garnish with parsley or shredded cheese if desired.
Notes
Use leftover rice to save time.
For more zing, add red pepper flakes.
Soup thickened? Add more broth. Too thin? Simmer uncovered.
Freezes best without rice—add fresh rice when reheating.
Vegetarian option: swap beef for lentils or plant-based crumbles and use vegetable broth.
