Description

A refreshing cucumber salad with sour cream, dill, garlic, and onions. Perfect for summer meals and quick family dinners.


Ingredients

  • 1 1/2 lbs English cucumbers
  • 1/2 medium purple or yellow onion, thinly sliced
  • 1 Tbsp fresh or frozen dill, chopped
  • 1/2 cup sour cream
  • 1/2 Tbsp fresh lemon juice
  • 1 garlic clove, pressed or grated
  • 1/2 tsp fine sea salt
  • Pinch black pepper

Instructions

  1. Wash and slice cucumbers into thin rounds.
  2. Thinly slice the onion and chop the dill.
  3. In a small bowl combine sour cream, lemon juice, garlic, dill, salt, and pepper.
  4. Stir dressing until smooth.
  5. Place cucumbers and onions into a large bowl.
  6. Pour dressing over vegetables.
  7. Toss gently until evenly coated.
  8. Serve immediately or chill briefly before serving.

Notes

  1. Dress salad shortly before serving for best texture.
  2. Add 1 to 2 tablespoons mayonnaise for a richer dressing.
  3. Greek yogurt can replace sour cream for a lighter option.
  4. Store refrigerated and enjoy within 1 day.
