Description

Creamy Garlic Parmesan Zoodles are a rich and satisfying low-carb alternative to traditional pasta. Spiralized zucchini noodles are coated in a velvety garlic-Parmesan cream sauce that delivers big flavor without the carbs. Quick, easy, and keto-friendly, this comfort food favorite is ready in under 20 minutes.

Ingredients

Scale
  • 1 tbsp butter

  • 2 garlic cloves, minced

  • 4 oz cream cheese

  • 23 tbsp milk

  • ¼ cup grated Parmesan cheese

  • 45 medium zucchini (about 600750 g), spiralized

  • Salt and pepper to taste

  • Optional: cherry tomatoes for garnish

Instructions

  • Melt butter in a large skillet over medium-low heat. Add minced garlic and cook for 1 minute until fragrant.

  • Stir in cream cheese and 2 tablespoons of milk. Whisk until smooth. Add more milk if needed to thin the sauce.

  • Add spiralized zucchini noodles to the pan and gently toss to coat with the sauce.

  • Sprinkle in Parmesan cheese and cook for 2–3 minutes, until zoodles are just tender.

  • Season with salt and pepper. Top with cherry tomatoes if desired. Serve immediately.

Notes

Pat zoodles dry with paper towels before cooking to reduce excess moisture.

Do not overcook zucchini noodles to avoid mushiness.

Add grilled chicken or shrimp for a complete meal.

For a spicy kick, add red pepper flakes.

Use plant-based alternatives for a dairy-free version.
