Description

Creamy Tuscan Butter Beans (also called Marry Me Butter Beans) are a quick, one-pan Tuscan-inspired dinner packed with rich, garlicky cream sauce, sun-dried tomatoes, Parmesan, and fresh basil. Ready in just 30 minutes, this cozy and elegant dish is hearty enough for a main or perfect as a side. Versatile and adaptable for vegetarian or vegan diets, it’s comfort food that feels special without the fuss.

  • 2 tbsp olive oil

  • 3 garlic cloves, minced

  • 1 small onion, diced

  • ½ cup sun-dried tomatoes, chopped

  • ½ cup chicken or vegetable broth

  • 1 cup heavy cream (or coconut cream for vegan)

  • 2 cans butter beans, rinsed and drained

  • ½ cup Parmesan cheese (or 3 tbsp nutritional yeast for vegan)

  • ½ tsp red pepper flakes (optional)

  • 1 tsp Italian seasoning

  • ¼ tsp salt

  • ¼ tsp black pepper

  • ¼ cup fresh basil leaves, chopped (plus extra for garnish)


Instructions

  • Heat olive oil in a large skillet over medium heat. Add garlic and onion; cook for 2–3 minutes until softened and fragrant.

  • Stir in sun-dried tomatoes; cook for 1–2 minutes to release flavor.

  • Pour in broth and bring to a simmer. Stir in heavy cream or coconut cream to create a smooth base.

  • Fold in butter beans and simmer for 5–7 minutes, letting them absorb the sauce.

  • Stir in Parmesan (or nutritional yeast) until sauce thickens slightly. Adjust thickness with extra broth if needed.

  • Add Italian seasoning, red pepper flakes, salt, and black pepper. Stir well.

  • Finish with chopped basil, garnish with extra leaves, and serve warm.

Notes

Use oil-packed sun-dried tomatoes for the richest flavor.

For a vegan option, use coconut cream and nutritional yeast.

Too thick? Add a splash of broth. Too thin? Simmer uncovered for a few minutes.

Freshly cooked butter beans can be used instead of canned for extra creaminess.

Great over pasta, rice, or quinoa to make it a complete meal.
