¼ cup grated Parmesan cheese (optional, for toasting croissants)
-
1 tbsp butter (for toasting)

1 cup shredded romaine lettuce
-
1 avocado, sliced (optional)
-
2 tbsp creamy lemon dressing or sauce of choice (e.g., honey mustard, spicy mayo)
-
Optional toppings: tomato slices, pickled onions, jalapeño slices
Instructions
-
Prep the Chicken
Season chicken with salt, pepper, garlic powder, and paprika. Let it sit 20 mins (or refrigerate up to 2 hours). -
Bread the Chicken
Coat chicken in flour, dip in beaten eggs, and press into panko breadcrumbs. Set aside. -
Fry or Bake
Heat oil to 350°F (175°C). Fry chicken for 5–6 mins per side until golden and cooked through. Drain on paper towels.
Baking option: Brush with oil and bake at 400°F (200°C) for 25 mins, flipping halfway. -
Toast the Croissants
Slice croissants in half. Butter lightly. For extra flavor, sprinkle Parmesan on the cut side. Toast in a skillet, cut side down, until golden. -
Assemble the Sandwich
Spread dressing on both croissant halves. Layer with lettuce, avocado (if using), and crispy chicken. Add any extras like tomatoes or onions. Close and serve warm.
Notes
-
Use chicken thighs for more juiciness.
-
Toasted Parmesan croissants add extra flavor and crunch.
-
Pair with a light salad or roasted veggies for a full meal.
-
For extra heat, add jalapeños or spicy mayo.
