Description

Crock Pot Creamy Cajun Chicken Pasta is a flavorful one-pot dinner that combines tender shredded chicken, bold Cajun spices, creamy Parmesan sauce, and perfectly cooked pasta. With minimal prep and big flavor, this comforting slow cooker dish is perfect for busy weeknights or casual family dinners.

  • 450 g (1 lb) boneless, skinless chicken breasts

  • 1 small onion, chopped

  • 1 bell pepper, chopped

  • 3 garlic cloves, minced

  • 1 tsp (5 g) garlic powder

  • 1 tsp (5 g) onion powder

  • 1/4 tsp (1 g) black pepper

  • 1 tbsp (15 g) Cajun seasoning

  • 1/2 tsp (2.5 g) smoked paprika

  • 1/2 tsp (2.5 g) salt

  • 410 g (14.5 oz) can tomatoes with juices

  • 240 ml (1 cup) chicken broth

  • 2 tbsp (30 ml) olive oil

  • 225 g (8 oz) penne pasta

  • 120 ml (1/2 cup) heavy cream

  • 50 g (1/2 cup) grated Parmesan cheese

  • Fresh parsley, for garnish


Instructions

  • Heat olive oil in a skillet. Lightly brown the chicken breasts on both sides and transfer to Crock Pot.

  • Add onion, bell pepper, garlic, tomatoes with juices, chicken broth, and all seasonings to the Crock Pot.

  • Cover and cook on low for 4 hours.

  • Remove chicken, shred with forks, and return to the pot.

  • Stir in heavy cream and Parmesan cheese.

  • Cook pasta separately according to package directions, then add to the Crock Pot and mix well.

  • Garnish with parsley and serve warm.

Notes

Browning the chicken adds depth of flavor but is optional.

Adjust Cajun spice to suit your taste.

Add veggies like spinach or mushrooms for variety.

For a thinner sauce, stir in more broth or milk.

Store leftovers in the fridge for up to 4 days; freeze before adding pasta.
