Description

This Crockpot Broccoli Cheese Soup is a creamy, cheesy classic that’s perfect for cold days. Made effortlessly in the slow cooker with simple ingredients, it delivers all the comfort of homemade soup with zero stovetop babysitting. Ideal for meal prep, freezer storage, or cozy family dinners.

Ingredients

Scale
  • 4 cups broccoli florets (fresh or frozen)

  • 1 medium onion, diced

  • 4 cups chicken broth (or vegetable broth)

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • Salt and black pepper to taste

  • 1 cup heavy cream

  • 2 cups shredded sharp cheddar cheese

Instructions

  1. Add Ingredients: Place broccoli, onion, broth, garlic powder, onion powder, salt, and pepper in the Crockpot.

  2. Slow Cook: Cover and cook on low for 4–6 hours, until broccoli is fork-tender.

  3. Blend: Use an immersion blender to blend the soup to your desired texture—chunky or smooth.

  4. Add Dairy: Stir in heavy cream and cheddar cheese. Set Crockpot to high and cook for 10 more minutes until melted and creamy.

  5. Serve: Ladle into bowls and serve warm, optionally topped with cracked pepper or extra cheese.

Notes

Use a blender if you don’t have an immersion one—cool slightly and blend in batches.

Add diced carrots or cauliflower for extra nutrition.

Adjust consistency by adding more cheese (thicker) or milk (thinner).

For vegetarian version, use vegetable broth.
