Ingredients

4 cups frozen diced potatoes (or 6 cups fresh potatoes, peeled and diced)

1 pound kielbasa sausage, sliced

1 can (10.5 oz) cream of chicken soup

1 cup sour cream

1 packet ranch seasoning mix

2 cups shredded cheddar cheese

1 cup shredded Colby Jack cheese

Salt and pepper to taste

Optional: 1/2 cup diced green onions or parsley for garnish
Instructions

Spray the crockpot with cooking spray.

Layer the frozen (or fresh) potatoes at the bottom of the crockpot.

Add the sliced kielbasa on top of the potatoes.

In a separate bowl, mix the cream of chicken soup, sour cream, and ranch seasoning. Pour this mixture over the potatoes and kielbasa.

Stir everything together to coat the ingredients evenly.

Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours.

Once done, sprinkle the shredded cheeses over the top and cover. Let it sit for 10–15 minutes until the cheese melts.
