Ingredients

Scale
  • 4 boneless, skinless chicken breasts

  • 1/2 cup (120 ml) chicken broth

  • 1/2 cup (120 ml) heavy cream

  • 1 cup (100 g) grated Parmesan cheese

  • 1 tbsp (8 g) cornstarch

  • 1 tbsp (9 g) garlic, minced

  • 1 tsp dried oregano

  • 1/2 tsp dried thyme

  • 1/4 tsp red pepper flakes (optional)

  • 1/2 cup (60 g) sun-dried tomatoes, chopped

  • 2 tbsp (28 g) butter

  • Salt and pepper, to taste

  • Fresh basil or parsley, chopped (for garnish)

Instructions

  • Season chicken breasts with salt and pepper.

  • In a bowl, whisk broth with cornstarch until smooth. Add cream, Parmesan, garlic, oregano, thyme, and red pepper flakes. Stir to combine.

  • Place chicken in the slow cooker and pour sauce mixture over the top.

  • Add chopped sun-dried tomatoes.

  • Cover and cook on low for 4 hours or high for 2 hours, until chicken is cooked through.

  • Stir in butter during the last 30 minutes.

  • Serve warm with fresh basil or parsley.

Notes

Chicken thighs can be used for a juicier texture.

Freshly grated Parmesan improves flavor and meltability.

For extra richness, stir in cream cheese at the end.

Pairs well with pasta, mashed potatoes, or crusty bread.
