Description

This easy Crockpot Potato Soup combines tender potatoes, smoky bacon, cheddar cheese, milk, and sour cream in a thick, comforting slow cooker soup.

Ingredients

Scale
  • 2 pounds large potatoes, peeled and cut into 1-inch cubes
  • 2 cups chicken broth
  • 8 ounces bacon, cooked and cut into bite-size pieces
  • 1/2 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon salt, or more to taste
  • 1/4 teaspoon ground black pepper, or more to taste
  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1 cup mild or sharp cheddar cheese, freshly shredded
  • 3/4 cup sour cream
  • Sliced green onions, for serving
  • Optional toppings: extra bacon, cheddar, sour cream, chives, or hot sauce

Instructions

  1. Add the potatoes, chicken broth, cooked bacon, onion, garlic, salt, and black pepper to a 6-quart slow cooker. Stir and spread the potatoes evenly.
  2. Cover and cook on high for 3 to 4 hours or on low for 5 to 6 hours, until the potatoes feel tender when pierced with a fork.
  3. Lightly mash some of the potatoes directly in the slow cooker, leaving plenty of whole cubes for texture.
  4. Add the butter and stir until it melts. Sprinkle in the flour and stir until no dry pockets remain.
  5. Slowly pour in the whole milk while stirring. Add the shredded cheddar cheese and sour cream, then mix well.
  6. Cover and cook on low for another 30 to 60 minutes, stirring once or twice, until the soup becomes thick and creamy.
  7. Taste and adjust the salt and black pepper as needed.
  8. Ladle into bowls and garnish with sliced green onions, extra bacon, cheddar, sour cream, chives, or hot sauce.

Notes

  1. Shred the cheddar directly from a block for smoother melting.
  2. Cut the potatoes into evenly sized cubes so they cook at the same rate.
  3. Mash only part of the potatoes to create a creamy base with hearty pieces.
  4. Store leftovers in an airtight container in the refrigerator for up to 3 days.
  5. Reheat gently and add a splash of milk or chicken broth if the soup becomes too thick.
