Description

A delicious low-carb crustless tomato pie layered with fresh tomatoes, mozzarella, basil, oregano, and eggs. Perfect for brunch, lunch, or dinner.


Ingredients

Scale
  • 4 large tomatoes, sliced
  • 12 teaspoons salt
  • 1 tablespoon butter
  • 1/2 cup onion, chopped
  • 1 garlic clove, minced
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh oregano, chopped
  • 67 basil leaves, chopped
  • 2 cups mozzarella cheese, shredded
  • 2 eggs, beaten
  • Extra mozzarella cheese for topping

Instructions

  1. Slice tomatoes and sprinkle with salt.
  2. Let tomatoes rest for 10-30 minutes.
  3. Saute onion and garlic in butter until soft.
  4. Mix onion mixture with cheese, eggs, oregano, basil, and pepper.
  5. Drain and blot tomatoes dry.
  6. Layer tomatoes and cheese mixture in a greased pie dish.
  7. Finish with tomatoes and extra mozzarella on top.
  8. Bake at 375°F for 30-40 minutes.
  9. Rest 5-7 minutes before serving.

Notes

  1. Salt and drain the tomatoes thoroughly.
  2. Fresh herbs provide the best flavor.
  3. Allow the pie to rest before slicing.
