Ingredients

1 English cucumber (approx. 300 g), unpeeled

10 oz grape or cherry tomatoes (280 g), halved

½ small red onion, thinly sliced (approx. ½ cup or 50 g)

2 tbsp olive oil (30 ml)

2 tbsp red wine vinegar (30 ml)

1 tsp honey (5 ml)

½ tsp Kosher or fine sea salt (2.5 g)

¼ tsp black pepper (0.5 g)

1 tbsp chopped fresh parsley, dill, and/or basil (optional)
Instructions

Trim ends off the cucumber, slice lengthwise, then cut into ¼-inch half moons.

Combine cucumber, halved tomatoes, and sliced onion in a medium bowl.

In a small bowl, whisk together olive oil, red wine vinegar, honey, salt, and pepper until well combined.

Pour dressing over the veggies and toss gently to coat.

Add chopped herbs if using and mix.

Serve immediately or chill for 1–2 hours for the best flavor.
Notes
Swap red wine vinegar with apple cider or white balsamic vinegar if needed.
Soak red onion in cold water for 10 minutes to reduce sharpness.
Add sliced radishes for extra crunch.
Fresh herbs elevate the flavor—don’t skip them if you have them!
