Description

Dandelion Honey is a vegan, bee-free alternative that captures the floral essence of spring. Made from foraged dandelion petals, lemon, vanilla, and sugar, this golden syrup is perfect for drizzling, sweetening, and gifting.


Ingredients

  • 4 cups (950 ml) dandelion petals

  • 4 cups (950 ml) water

  • 3 lemon slices (1/4-inch thick)

  • 1/2 vanilla bean, split lengthwise

  • 2 1/2 cups (500 g) granulated sugar


Instructions

  1. Harvest Dandelions: Pick 4 cups of dandelion flowers from a clean, pesticide-free area during the day.

  2. Prepare the Petals: Rinse gently and dry. Remove yellow petals from each flower, discarding the green parts.

  3. Make the Infusion: In a saucepan, combine petals and water. Bring to a boil, remove from heat, add lemon slices and vanilla bean. Cover and steep at room temperature for 6 hours.

  4. Strain the Liquid: Strain through a fine mesh sieve, pressing down to extract all the liquid. Discard solids.

  5. Create the Syrup: Return liquid to pan. Add sugar and stir until dissolved. Simmer gently for 60–90 minutes until thickened.

  6. Bottle the Honey: Pour into sterilized jars. Cool before sealing. Store in a cool, dark place.

Notes

Carefully remove all green parts from the flowers to avoid bitterness.

The honey will thicken more as it cools—test on a cold plate for doneness.

Store sealed jars in a dark pantry for up to 1 year. Refrigerate after opening.
