Description

Dandelion Soda is a sparkling, homemade probiotic drink infused with floral dandelion petals and naturally fermented using a ginger bug starter. This refreshing, gut-friendly beverage is lightly sweet, subtly earthy, and packed with natural fizz—a perfect herbal twist on soda that nourishes your body while delighting your taste buds.


Ingredients

  • 24 cups packed dandelion petals (240480 ml)

  • 4 cups water (960 ml)

  • 3/4 cup sugar (150 g)

  • 1 teaspoon chopped ginger (optional, 5 g)

  • 1 teaspoon lemon zest or peel (optional)

  • 1/2 cup ginger bug starter (120 ml)

  • 2 cups room temperature water (480 ml)


Instructions

  • Harvest 4 cups of clean, pesticide-free dandelion flowers and remove all green parts.

  • Place the yellow petals in a large mason jar.

  • Boil 4 cups of water and pour over petals. Steep overnight, covered.

  • Strain the petals and gently reheat the liquid—do not boil.

  • Stir in sugar, ginger, and lemon zest until dissolved.

  • Let cool completely.

  • Pour the syrup into flip-top bottles.

  • Add ginger bug and 2 cups room temperature water. Swirl to mix.

  • Seal bottles and ferment at room temperature for 1–3 days.

  • “Burp” bottles daily to release pressure.

  • When fizzy, refrigerate and consume within 3–5 days.

Notes

Use sterilized equipment to prevent spoilage.

Warmer temperatures speed up fermentation.

Customize with fresh herbs or berries before bottling.

Open with care—natural carbonation can build quickly.
