Easy chicken stir fry made in 30 minutes with tender chicken, crisp vegetables, and a flavorful homemade sauce.

- 3 boneless skinless chicken breasts, diced into 1-inch pieces
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil, divided
- 2 cups broccoli florets
- 1/2 yellow bell pepper, cut into 1-inch pieces
- 1/2 red bell pepper, cut into 1-inch pieces
- 1/2 cup shredded carrots
- 1/2 teaspoon ground ginger
- 2 teaspoons minced garlic
- 2 tablespoons sesame seeds
- 1 tablespoon cornstarch
- 1/4 cup chicken broth
- 1/4 cup soy sauce
- 2 tablespoons honey
Instructions
- Whisk together cornstarch, chicken broth, soy sauce, and honey in a small bowl and set aside.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add diced chicken, season with salt and pepper, and cook for 3 to 5 minutes until browned and cooked through. Remove from skillet.
- Add remaining olive oil to the skillet. Add broccoli, bell peppers, and shredded carrots. Cook until vegetables are tender but crisp.
- Stir in ground ginger and minced garlic. Cook for 1 to 2 minutes until fragrant.
- Return chicken to skillet. Pour sauce over chicken and vegetables and stir to coat evenly.
- Bring to a boil and cook for 1 minute until sauce thickens.
- Sprinkle with sesame seeds and serve immediately.
Notes
- Refrigerate leftovers in an airtight container for up to 5 days.
- Reheat in a skillet or microwave until warmed through.
