  • 1 cup heavy cream

Instructions

  • Sauté the Aromatics:
    Melt butter with olive oil in a large pot over medium heat. Add onion and cook 3–4 minutes until soft. Stir in garlic and cook 30 seconds until fragrant.

  • Cook the Mushrooms:
    Add mushrooms, thyme, salt, and pepper. Cook 6–8 minutes, stirring occasionally, until golden brown and slightly caramelized.

  • Thicken the Base:
    Sprinkle in flour and stir well to coat. Cook 1–2 minutes to remove raw flour taste.

  • Add the Broth:
    Gradually pour in broth while stirring to prevent lumps. Simmer for 10 minutes until slightly thickened.

  • Finish with Cream:
    Lower heat and stir in heavy cream and soy sauce. Simmer a few minutes more—do not boil.

  • Blend (Optional):
    Use an immersion blender to puree all or half of the soup for a silky texture.

  • Serve:
    Ladle into bowls, top with parsley, and enjoy warm with crusty bread.
