An easy crockpot fajitas ultimate recipe filled with chicken, peppers, and bold spices. Perfect for quick dinners.
Ingredients
1 ½ pounds boneless, skinless chicken breasts
2 bell peppers (any color), sliced
1 large onion, sliced
3 cloves garlic, minced
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon paprika
½ teaspoon cayenne pepper (optional)
1 teaspoon salt
½ teaspoon black pepper
½ cup chicken broth
Juice of 1 lime
Tortillas for serving
Toppings: cheese, sour cream, salsa, avocado
Instructions
1. Layer sliced bell peppers and onions in the crockpot.
2. Place chicken breasts on top of vegetables.
3. Mix chili powder, cumin, paprika, cayenne, salt, and pepper; sprinkle over chicken.
4. Add garlic and pour chicken broth over the top.
5. Squeeze lime juice across ingredients.
6. Cover and cook on low for 6-8 hours or high for 3-4 hours.
7. Shred chicken with forks and stir into the mixture.
8. Serve with tortillas and toppings.
Notes
For a spicier version, add extra cayenne or jalapeños.
Leftovers keep well for meal prep or wraps.
