  • 1 lb (450 g) lean ground beef

  • 8 flour or corn tortillas (8 inches each)

  • 2 cups (480 mL) enchilada sauce (store-bought or homemade)

  • 1 cup (115 g) shredded cheddar or Monterey Jack cheese

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 1 tsp cumin

  • 1 tsp chili powder

  • Sour cream, for topping

  • Fresh cilantro or sliced jalapeños, for garnish (optional)


Instructions

  • Preheat the oven:
    Preheat to 375°F (190°C) and lightly grease a 9×13-inch (23×33 cm) baking dish.

  • Brown the beef:
    In a large skillet over medium heat, cook ground beef and diced onion for 5–7 minutes until browned and onions are soft.

  • Add flavor:
    Stir in minced garlic, cumin, and chili powder. Cook for 1 minute until fragrant.

  • Assemble the enchiladas:
    Spoon 2–3 tablespoons of beef mixture onto each tortilla, roll tightly, and place seam-side down in the prepared baking dish.

  • Add sauce and cheese:
    Pour enchilada sauce evenly over the tortillas, ensuring full coverage. Sprinkle with shredded cheese.

  • Bake:
    Bake uncovered for 20–25 minutes, until cheese is melted and bubbly.

  • Serve:
    Let cool slightly, then top with sour cream, cilantro, or jalapeños. Serve warm with rice or beans.

Notes

Warm tortillas briefly in the microwave before rolling to prevent cracks.

Use corn tortillas for a more traditional taste.

For extra cheesy results, add a little cheese inside each tortilla before rolling.

Assemble ahead of time and refrigerate — just bake when ready to serve.
