Description

This Easy Lemon Zucchini Bread combines the refreshing zest of lemon with the moisture of zucchini for a soft, flavorful loaf. It’s a light yet satisfying treat, perfect for breakfast, a snack, or dessert. The zucchini helps keep the bread tender while the lemon adds a burst of citrus. It’s a versatile, simple recipe that’s ideal for any occasion.

Ingredients

Scale
  • 2 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 1/2 cups granulated sugar

  • 1 tablespoon lemon zest (freshly grated)

  • 2 large eggs

  • 1/2 cup vegetable oil

  • 1 teaspoon vanilla extract

  • 2 cups grated zucchini (peeled or unpeeled)

Optional Add-ins for Extra Flavor:

  • 2 tablespoons lemon juice

  • 1/4 cup poppy seeds

  • 1/4 cup dried cranberries or raisins

  • 1/4 cup chocolate chips

Instructions

  • Prepare the Zucchini: Wash and grate the zucchini. Squeeze out excess moisture using a clean towel.

  • Mix Wet Ingredients: In a large bowl, combine sugar and lemon zest. Add eggs, oil, and vanilla extract, and mix until smooth.

  • Incorporate Dry Ingredients: In a separate bowl, whisk flour, baking powder, baking soda, and salt. Gradually add to the wet mixture and stir gently.

  • Add Zucchini: Fold the grated zucchini into the batter, being careful not to overmix.

  • Bake: Preheat oven to 350°F (175°C). Grease a loaf pan and pour in the batter. Bake for 50-60 minutes, checking with a toothpick for doneness.

  • Prepare Lemon Glaze (Optional): Mix powdered sugar and lemon juice, then drizzle over cooled bread.

Notes

Squeeze out excess moisture from zucchini to avoid soggy bread.

Optional ingredients like lemon juice, poppy seeds, and chocolate chips can be added for more flavor.

If using frozen zucchini, make sure to thaw and drain before use.
