This Easy Red Velvet Cookie Cake is a soft and chewy dessert with a classic red velvet flavor, loaded with white chocolate chips and topped with a creamy frosting. Perfect for birthdays, holidays, or any special occasion!
Ingredients
-
1 box (15.25 oz) red velvet cake mix
-
1/2 cup unsalted butter, melted
-
2 eggs
-
1 teaspoon vanilla extract
-
1 cup white chocolate chips
-
1/2 cup cream cheese frosting (for topping, optional)
Instructions
-
Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper.
-
Mix the dough: In a large bowl, combine the red velvet cake mix, melted butter, eggs, and vanilla extract. Stir until well combined.
-
Fold in white chocolate chips evenly throughout the dough.
-
Press the dough into the prepared cake pan, spreading it evenly.
-
Bake for 18-22 minutes or until the edges are set and the center looks slightly underbaked (it will firm up as it cools).
-
Cool completely in the pan before removing.
-
Decorate: If desired, pipe or spread cream cheese frosting on top before serving.
Notes
-
For a fudgier texture, slightly underbake the cookie cake.
-
Swap white chocolate chips for dark or milk chocolate for a different flavor.
-
Store leftovers in an airtight container at room temperature for up to 3 days.
