Description

This Easy Red Velvet Cookie Cake is a soft and chewy dessert with a classic red velvet flavor, loaded with white chocolate chips and topped with a creamy frosting. Perfect for birthdays, holidays, or any special occasion!

Ingredients

Scale
  • 1 box (15.25 oz) red velvet cake mix

  • 1/2 cup unsalted butter, melted

  • 2 eggs

  • 1 teaspoon vanilla extract

  • 1 cup white chocolate chips

  • 1/2 cup cream cheese frosting (for topping, optional)

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper.

  • Mix the dough: In a large bowl, combine the red velvet cake mix, melted butter, eggs, and vanilla extract. Stir until well combined.

  • Fold in white chocolate chips evenly throughout the dough.

  • Press the dough into the prepared cake pan, spreading it evenly.

  • Bake for 18-22 minutes or until the edges are set and the center looks slightly underbaked (it will firm up as it cools).

  • Cool completely in the pan before removing.

  • Decorate: If desired, pipe or spread cream cheese frosting on top before serving.

Notes

  • For a fudgier texture, slightly underbake the cookie cake.

  • Swap white chocolate chips for dark or milk chocolate for a different flavor.

  • Store leftovers in an airtight container at room temperature for up to 3 days.
