Description

Easy rhubarb crisp with a sweet, buttery oat topping and tart rhubarb filling. A quick and simple spring dessert perfect for any occasion.


Ingredients

  • 2 pounds sliced rhubarb
  • 1/4 cup cornstarch
  • 3/4 cup sugar
  • 1/2 teaspoon ground cinnamon
  • 1 cup oats
  • 1/2 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon ground cinnamon
  • 1 pinch salt
  • 1/2 cup butter, cold and cubed

Instructions

  1. Preheat oven to 400°F and butter a 2-quart casserole dish
  2. Combine rhubarb, cornstarch, sugar, and cinnamon in a bowl
  3. Spread mixture evenly into prepared dish
  4. Mix oats, flour, sugar, cinnamon, and salt in another bowl
  5. Cut in cold butter until crumbly
  6. Sprinkle topping over rhubarb filling
  7. Bake for 35 minutes until golden and bubbly
  8. Let rest for 10 minutes before serving

Notes

  1. Use frozen rhubarb if needed, thaw and drain before using
  2. Quick oats create a softer topping texture
  3. Keep butter cold for best crumble consistency
