Description

These easy sugar cookies are no fuss, use butter, sugar, and flour, and come together quickly for sweet, buttery eggless cookies with lightly crisp edges.


Ingredients

  • 1 cup butter, room temperature
  • 2/3 cup granulated sugar
  • 3 tablespoons granulated sugar, for rolling
  • 2 cups plus 1 tablespoon all-purpose flour, spooned and leveled
  • 1 teaspoon vanilla extract, optional but recommended
  • Rainbow sprinkles or nonpareils, optional but recommended

Instructions

  1. Preheat oven to 325 degrees F. Line 2 large baking sheets with parchment paper.
  2. In a medium bowl, use a handheld electric mixer to beat the butter and 2/3 cup sugar until combined. The mixture may look slightly gritty.
  3. Add the flour and blend well. Mix in the vanilla extract if using.
  4. Pinch off a small piece of dough and press it with your fingers. It should come together easily and feel soft, buttery, and smooth. If it feels crumbly, knead it a little longer.
  5. Use a cookie scoop to scoop 1-inch balls. Knead and roll each ball in your palms until smooth.
  6. Gently roll the dough balls in the remaining 3 tablespoons sugar until lightly coated. Transfer them to the baking sheets, spacing them 2 inches apart.
  7. Use the bottom of a measuring cup or glass to press each ball flat. Add sprinkles or nonpareils if using, then press lightly again so they stick. The dough should be about 3/16 inch thick.
  8. Bake for 14 to 16 minutes, or until the edges and bottoms look just slightly golden.
  9. Remove from the oven and let the cookies rest on the baking sheets for 10 to 15 minutes. Transfer to a cooling rack to cool completely, or enjoy once set.

Notes

  1. This recipe makes a slightly crunchier sugar cookie, but the cookies should not taste dry or crumbly.
  2. Measure flour by spooning it into the measuring cup and leveling it off.
  3. Do not skip the cooling time on the baking sheet because the cookies finish setting as they rest.
  4. Vanilla and sprinkles are optional, but they add better flavor and a prettier finish.
