- 1 1/2 pounds boneless skinless chicken breasts or thighs
- 1/3 cup olive oil
- 3 tablespoons lemon juice
- 2 tablespoons reduced sodium soy sauce
- 2 tablespoons balsamic vinegar
- 2 tablespoons brown sugar
- 1 tablespoon Dijon mustard
- 1 1/2 teaspoons onion powder
- 1 1/2 teaspoons garlic powder
- 1 1/2 teaspoons salt
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes
Instructions
- Whisk together olive oil, lemon juice, soy sauce, balsamic vinegar, brown sugar, Dijon mustard, and seasonings in a bowl or bag
- Add chicken and coat evenly with marinade
- Marinate for 30 minutes at room temperature or up to 12 hours in the refrigerator
- Let chicken rest for 15-30 minutes before cooking
- Grill at 400°F for 5-7 minutes per side until internal temperature reaches 165°F
- Alternatively cook on stovetop or bake at 425°F for 16-18 minutes until fully cooked
- Let chicken rest for 5 minutes before slicing and serving
Notes
- Do not marinate longer than 12 hours to prevent tough texture
- Pound chicken to even thickness for even cooking
- Use a meat thermometer to avoid overcooking
- Freeze chicken in marinade up to 3 months for meal prep
