Description

Fresh Cherry Sorbet is a refreshing frozen dessert made with ripe cherries, simple syrup, lime juice, and kosher salt for a bright summer treat.


Ingredients

  • 4 cups pitted cherries, about 2 pounds fresh cherries
  • 1 cup granulated sugar
  • 1 cup water
  • 3 teaspoons freshly squeezed lime juice, plus more to taste
  • 1/2 teaspoon kosher salt

Instructions

  1. Freeze the bowl or base of your ice cream maker at least 24 hours before making the sorbet.
  2. Combine the sugar and water in a small saucepan over medium-high heat. Stir occasionally and simmer for 3 to 5 minutes, or until the sugar dissolves. Remove from heat and cool.
  3. Pit all of the cherries with a cherry pitter. You should have about 4 to 5 cups of pitted cherries.
  4. Add the cherries, 1/2 cup cooled simple syrup, lime juice, and kosher salt to a high-powered blender. Blend until smooth.
  5. Strain the mixture through a fine-mesh sieve into a large measuring cup or bowl. Press gently with a rubber spatula, then discard the solids.
  6. Use the egg float test to check sugar levels. Lower a clean egg into the cherry mixture. If a nickel- to quarter-sized patch of shell shows above the surface, the base is ready. If the egg sinks, stir in more simple syrup and test again.
  7. Taste the sorbet base and add more lime juice if desired.
  8. Cover and chill the cherry mixture in the refrigerator for 1 hour.
  9. Pour the chilled cherry mixture into the frozen ice cream maker base and churn for about 15 minutes, or until the texture resembles soft serve.
  10. Transfer the sorbet to an 8×5-inch loaf pan or freezer-safe container. Freeze for 2 to 4 hours, or until firm.
  11. Remove the sorbet from the freezer a few minutes before scooping and serving.

Notes

  1. Store frozen sorbet in the freezer for up to 1 month.
  2. You can use other fruits such as strawberries, raspberries, peaches, or plums.
  3. To make this without an ice cream maker, freeze pitted cherries until solid, then blend with the remaining ingredients until smooth. Add a little warm water only if needed, taste, adjust sweetness, and freeze until firm.
  4. For a boozy version, add 1 to 3 tablespoons of liquor with the simple syrup when blending.
  5. Use a food processor if you do not have a blender.
