680 g (1.5 lbs) beef stew meat, cut into bite-sized pieces

450 g (1 lb) baby potatoes, halved

60 g (4 tbsp) unsalted butter, melted

3 cloves garlic, minced

1 tsp onion powder

1 tsp smoked paprika

0.5 tsp dried thyme

0.5 tsp dried rosemary

0.5 tsp salt, or to taste

0.25 tsp black pepper

60 ml (0.25 cup) beef broth

1 tbsp olive oil
Instructions

Cut beef into bite-sized cubes and halve baby potatoes. Optionally, parboil potatoes for 5 minutes.

Heat olive oil in a skillet over medium-high heat. Sear beef for 2–3 minutes per side until browned.

Mix melted butter with garlic, onion powder, paprika, thyme, rosemary, salt, and pepper.

Add beef and potatoes to slow cooker. Pour garlic butter mixture and beef broth over them.

Cover and cook on low for 6–8 hours or high for 3–4 hours until the beef is tender and the potatoes are infused with flavour.

Let rest for 10 minutes before serving. Garnish with chopped parsley if desired.
Notes
Searing the beef first enhances the flavor significantly.
Parboiling is optional depending on your preferred potato texture.
Leftovers are excellent for breakfast hash, topped with eggs.
You can bake this in a Dutch oven if no slow cooker is available.
