Ingredients

1.5 pounds beef stew meat, cut into bite-sized pieces

1 pound baby potatoes, halved

4 tablespoons unsalted butter, melted

3 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon dried thyme

½ teaspoon dried rosemary

½ teaspoon salt (or to taste)

¼ teaspoon black pepper

¼ cup beef broth

1 tablespoon olive oil
Instructions

Cut beef into bite-sized chunks and halve baby potatoes. (Optional: parboil potatoes for 5 minutes to reduce cook time.)

Heat olive oil in a skillet over medium-high heat. Sear beef bites until browned on all sides. Transfer to the slow cooker.

In a small bowl, whisk together melted butter, garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper.

Add potatoes to the slow cooker. Pour garlic butter sauce over them. Add beef broth.

Cover and cook on low 6–8 hours or high 3–4 hours, until beef is tender and potatoes are soft.

Let rest 10 minutes before serving.
Notes
Sear beef for maximum flavor.
Add chili flakes if you prefer heat.
Broil the finished dish for a few minutes for crispy potatoes.
Double the recipe for easy leftovers.
Add extra broth if you want more sauce.
