Ingredients

- 2 tablespoons cooking oil
- 1 1/2 pounds redskin or gold potatoes cut into bite size pieces
- Kosher salt
- Black pepper
- Seasoning blend of choice
- 1 1/2 to 2 pounds sirloin steak cut into bite size pieces
- 6 to 8 cloves garlic minced
- 4 tablespoons butter
Instructions
- Preheat the griddle to medium heat for several minutes.
- Add cooking oil and the potatoes, then season with kosher salt, pepper, and seasoning blend.
- Add a splash of water and cover with a melting dome. Cook for 8 to 9 minutes, stirring occasionally and adding a little water before covering again.
- Remove the dome and add more cooking oil if needed. Add the steak pieces and minced garlic.
- Season again lightly with salt, pepper, and seasoning blend.
- Cook for 5 to 6 minutes, mixing occasionally until the steak is browned and cooked through.
- Add butter during the final minute and mix everything together as it melts to coat the steak and potatoes.
Notes
- Cut steak into small bite size pieces for quick cooking.
- Add garlic only when the steak is added to prevent burning.
- Use a melting dome to soften the potatoes faster.
- Butter added at the end creates a rich garlic butter coating.
