Description

  • 1½ cups (190 g) all-purpose flour

  • ½ cup (100 g) white sugar

  • 1½ tsp baking powder

  • ½ tsp salt

  • ¼ cup (60 ml) skim milk

  • ¾ cup (180 g) low-fat Greek yogurt (1–2%)

  • ¼ cup (60 ml) vegetable oil

  • 2 large eggs

  • 1 tsp vanilla extract

  • ¾ cup (130 g) dark or semi-sweet chocolate chips


Instructions

  • Preheat oven to 190°C (375°F). Line a 12-cup muffin tin with paper liners.

  • In a large bowl, whisk together flour, sugar, baking powder, and salt.

  • Add milk, yogurt, oil, eggs, and vanilla. Stir until just combined—do not overmix.

  • Fold in chocolate chips evenly.

  • Divide batter among muffin cups.

  • Bake for 17–19 minutes, or until a toothpick inserted in the center comes out clean.

  • Cool on a wire rack.

Notes

Avoid overmixing to keep muffins light.

Use mini chocolate chips for better distribution.

Add oats or raw sugar on top for extra crunch.

Freeze for up to 2 months; reheat gently.
