Description

Grilled Bruschetta Chicken is a light, flavorful summer dinner that brings together juicy grilled chicken and a fresh tomato-basil bruschetta topping. Inspired by Italian caprese flavors, this dish is high in protein, low in carbs, and full of seasonal flair—perfect for both casual meals and elegant outdoor dining.


Ingredients

  • 3 vine-ripe tomatoes, chopped

  • 2 garlic cloves, minced

  • 1/4 cup chopped red onion (60 ml)

  • 2 tablespoons chopped fresh basil (10 g)

  • 1 tablespoon extra virgin olive oil (15 ml)

  • 1 tablespoon balsamic vinegar (15 ml)

  • Salt and freshly cracked black pepper, to taste

  • 3 oz part-skim mozzarella, diced (85 g, optional)

  • 1.25 lbs thin-sliced chicken cutlets (567 g, about 8 pieces)


Instructions

  • In a small bowl, mix red onion, olive oil, balsamic vinegar, 1/4 tsp salt, and pepper. Let sit for a few minutes.

  • In a large bowl, combine tomatoes, garlic, basil, and the onion-balsamic mix.

  • Season with 1/8 tsp salt and pepper. Let marinate 10 minutes to overnight.

  • Fold in diced mozzarella just before serving (if using).

  • Preheat grill to medium-high and lightly oil grates.

  • Season chicken with salt and pepper.

  • Grill chicken 2 minutes per side until cooked through.

  • Plate grilled chicken and spoon bruschetta topping over it.

  • Serve immediately while warm.

Notes

Use peak-season tomatoes for the best flavor.

Let the mozzarella warm to room temperature for a better texture.

Add optional ingredients like chopped cucumber or avocado for variety.

Can be made with baked chicken as an alternative.
