For the Danish Pastry:
- 1 sheet puff pastry, thawed
- 4 oz (113g) cream cheese, softened
- 2 tbsp granulated sugar
- ½ tsp vanilla extract
- ½ cup (120g) crushed pineapple, well-drained
- ¼ cup (20g) sweetened shredded coconut
- 1 tbsp all-purpose flour
- 1 egg + 1 tbsp water (for egg wash)
For the Glaze:
- ½ cup (60g) powdered sugar
- 1 tbsp pineapple juice (or milk)
- ½ tsp vanilla extract
Instructions
Prepare the Filling:
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a mixing bowl, beat together cream cheese, sugar, vanilla extract, and flour until smooth.
- Fold in crushed pineapple and shredded coconut. Set aside.
Assemble the Danish:
- Roll out the puff pastry and cut it into four equal squares.
- Spoon about 1-2 tablespoons of the cheesecake filling onto the center of each square.
- Fold two opposite corners over the filling and press lightly to seal.
- Brush the pastries with egg wash for a golden finish.
Bake the Danish:
- Bake for 15-18 minutes, or until the pastries are puffed and golden brown.
- Allow them to cool slightly before glazing.
Prepare the Glaze & Serve:
- In a small bowl, whisk together powdered sugar, pineapple juice, and vanilla extract until smooth.
- Drizzle the glaze over the warm Danish pastries and enjoy!
