Ingredients

1 lb (450g) boneless, skinless chicken breast

4 cloves garlic, minced

1/3 cup (80 ml) low sodium soy sauce

3 tbsp (45 ml) maple syrup

2 tbsp (30 ml) rice wine vinegar

1/2 tsp (2.5g) grated fresh ginger or squeeze ginger

1 tsp (5 ml) sriracha

1 tbsp sesame seeds (optional, for garnish)

Chopped scallions, for garnish
Instructions

In a slow cooker, whisk together soy sauce, maple syrup, rice wine vinegar, ginger, garlic, and sriracha.

Add chicken breasts and coat thoroughly in the sauce.

Cover and cook on HIGH for 2 hours or LOW for 4 hours, until chicken is tender and cooked through.

Remove chicken and shred with two forks.

Return shredded chicken to the slow cooker and mix well with the sauce.

Serve hot, topped with scallions and sesame seeds. Add more sriracha if desired.
Notes
Chicken thighs can be used for a richer flavor.
Use fresh ginger for best flavor; squeeze ginger works for convenience.
For thicker sauce: remove chicken and simmer sauce uncovered on HIGH for 10–15 minutes before returning chicken.
Serve with cauliflower rice, jasmine rice, or steamed vegetables for a full meal.
